Refreshing summer delight from Greece: Tzatziki
A side dish or sauce, Tzatziki is made of strained “Greek” yogurt mixed with cucumbers, garlic, salt, olive oil.
Wash and peel a medium cucumber. Shred it with a large grater. Put it into a pasta strainer with some salt and leave it for half an hour in the fridge.
In the meantime put 250 gr of Greek yogurt into a pot. Mince one garlic clove and season it with some olive oil.
Take the shred cucumber out of the fridge and squeeze it using both hands to drain the water out. Put it into the pot with the yogurt, add the garlic and the olive oil, mix with a spoon. You can add some dill or fresh mint.
